YuMMy Chicken Recipe!!!

So, I haven't felt good at all lately with my stupid stomach. :( On Tuesday I was at the doctor all day then had to go for a CT scan at the hospital the next day. Not fun at all! I've missed everyday of work this week too! Not cool because I don't need to miss! I've been having bad pains in my stomach and my white blood count was high and my liver enzymes were high also. Not a fun week at The Brown House! I haven't been eating much because my stomach hurts worse when I eat but I decided I needed some chicken.

While using my oh so favorite site Stumble! I found a yummy chicken recipe and super easy! I also had everything I needed at the house! WOO! Simple and easy and I don't need to go to the store??? YES PLEASE!!! I decided to add a little MeG touch to the recipe when I cooked it for lunch today. I also made a bag of brown rice. The recipe calls for lemon juice to dip the chicken in. I cut a few lemons up and used a fork to help *juice* the lemons. (Thanks to Rachel Ray!) I trimmed all of the fat off the chicken breast then let each side soak in the lemon juice for about 2 minutes. I then got a small plate and sprinkled the onion soup mix packet (I didn't follow her recipe with garlic powder.) and fresh ground pepper. I prefer to use Kosher Salt when I use salt in the kitchen. It brings out the salty flavor I love! I place the chicken breast on the plate then seasoned the orher side the same way. I didn't have parsley for some odd reason so I used my favorite garlic salt mixture which had parsley in it.

Of course it started raining when I was ready to cook my chicken. So, I decided to cook the chicken inside on a skillet. BOO for not being able to grill. I love the flavor from the grill so much better. Once the chicken was almost finished I took it out of the skillet to cut into pieces. I placed the chicken back into the skillet and squeezed a little bit of lemon juice and sprinkled kosher salt. Just to seal in the last little bit on the inside of the chicken. YuMMo!  Placing this simple tasty chopped up chicken breast on a bed of brown rice is quick and easy and super healthy! Loving lemon and garlic I decided to squeese a tiny amount of lemon juice with the garlic salt mixture. Doing this gives the rice a yummy flavor too! Enjoy!!!
